Butterbrickle Ice Cream challenge

Heya folks,

Serene and I are starting on a new challenge: to recreate the
butterbrickle ice cream of my youth.

It is one of my favorite ice creams of all time, and I can't find it
in most stores. It is also the favorite ice cream of Serene's
partner.

I did find it in one of the local Sunflowers here in town, but it was
a shadow of what I remembered. Not enough brickle, and it tasted a
bit washed out.

Serene started this, LOL. She put out a question on Twitter asking
what our favorite ice cream was, and I responded with Butterbrickle.
She said that was her partner's favorite too...and then we started
thinking that it might be fun to experiment with that ice cream and
get one with the right taste.

So, we need a starter recipe for this. Anyone got a recipe for
butterbrickle ice cream?

I will be taking my KitchenAid ice cream attachment with me on my next
contract so that I can experiment. So far, I think I and Serene's
partner will be the taste testers.

This used to be the recipe I used, but the "Just the Nuts" candy is no
longer made. You could make brickle from scratch or use Heath bars or
toffee candy. In any case, the brown sugar in the recipe will give
your custard the deep, deep flavor it needs to surround some yummy
toffee.

Boron

Brown Sugar Ice Cream
1 cup milk
1 scant packed cup brown sugar
4 egg yolks
3 cups heavy cream
1 to 1-1/2 cups broken up Poppycock-"Just the Nuts" candy

Heat the cream. milk and sugar in a heavy-bottomed saucepan, stirring
occasionally until the sugar is dissolved and the mixture is hot.
place the egg yolks in a bowl and whisk briefly. Still whisking,
slowly pour in about 1 cup of the hot liquid. When the mixture is
blended, slowly pour it into the liquid in the saucepan, whisking
constantly. Cook over heat, stirring constantly until the mixture
thickens slightly and coats the back of a spoon, about 8 minutes. Be
sure not let the mixture boil at any time or will curdle. strain into
a clean bowl and cool thoroughly.
Pour the mixture into the bowl of the machine and freeze, adding the
broken "Just the Nuts" about 10 minutes into the freeze.
Makes 5 cups.

Thanks!!!

I hadn't gotten as far as thinking about making my own brickle, but
that might be an idea. Not even sure how or what it is made from...
So guess I will put out the call for recipes for that as well..if
anyone has any....

You can buy bags of Heath candy bits near the ice cream toppings or
on the baking aisle by the chocolate chips. It shouldn't be too
hard to substitute brown sugar for some of the white sugar (I
wouldn't sub all the white sugar) in a vanilla ice cream recipe, and
stir in some Heath pieces.

Wait: Does this mean your next contract will be in the Bay Area, or do you
mean that you and Serene will be experimenting separately?

Isn't it just vanilla ice cream with Nutterfingers in it? We used
Clark Bars back in my daze (had to, since we lived in Pittsburgh).
