Burdock removal from my garden.?

My yard is full of burdocks (the bushy plants that look like rhubarb). It's worse in my garden (it used to be a horse feeding pen). I don't want to spray them with vegitation killer, as they are IN my garden. I already doused them with vinegar, which did nothing. The roots are REALLY deep and hard to get out.
HELP!
