Buffet ideas.................?

Meat balls prepared in a crock pot are hassle free and filling if you provide some rolls so people can make meatball subs if they want.
 
My niece is having a christening for my great-nephew and has asked me to help with the buffet. Not really any good at this sort of thing! Also she hasn't got much money and I won't have much time to do anything as I am going to a wedding the day before.
I was thinking of making a batch of sandwiches a few days before and then freezing them until the day. Would they be ok? I wouldn't want to give anyone food poisoning!
 
I really don't think freezing sandwiches is a good idea. I have never done it myself but I don't think it would work - a lot of sandwich fillings aren't suitable for freezing and salad items etc definitely don't freeze well.

You could cook some food from frozen on the day - low hassle items such as sausage rolls / mini pizzas etc. There is a lot of choice in this range if you go to Iceland / your local supermarket.

Simple things that everyone likes - crisps / salad and dips etc. You can buy mini scotch eggs etc from the refrigerated section of the supermarket and just keep them in your fridge until the day - then just put them on a plate. Don't even need to warm them up.

Sandwiches are always popular but, if you won't have time to make any, there are lots of alternatives. Think about what people who are attending the christening like to eat and go from there.

Freezing made up sandwiches for days at a time is not a good idea . they will become soggy wilted and off flavor .. why not plan on making up an attractive platter of cold sliced deli meats and cheeses like turkey ham , salami swiss cheese american, cheddar along with rolls/,marble rye , pickle, olives ,mustard mayo they can make up their own sandwiches fresh ,also make a couple of dips and have some fresh veggies like baby carrots ,broccoli buds celery sticks, cauliflower buds & chips ..you can buy a bag of cheese cubes and stick each one with a pretzel stick put on a pretty platter for finger foods egg salad sandwiches with bacon and homemade chicken salad is very inexpensive to make and delicious but does take some preparation ahead of time large sheet cakes are also simple and easy can be baked frosted and served in the same pan can buy throw away aluminum pans at the dollar store the cake CAN be made a couple of days ahead of time also salads like potato salad,. baked beans coleslaw ,3 bean salad,macaroni salad( Do not make anything with tuna ahead of time it deteriorates quickly ) can be made two days before the cake and salads are where you can help out and prepare for the buffet .. Your niece can make most all these up the day before herself there really is not alot of cooking just preparing ahead of time and getting organized, getting things ready ,.she can make a list and check things off..with you offering a helping hand I am sure the christening will be a success . and everyone will love the food . and not get food poisoning LOL.
 
I wouldn't freeze sandwiches, why not do sausage rolls, val eu vents, pasta salads, if your doing sandwiches, get the tubs of sandwich fillers & do them that morning, those tubs are great for val eu vent fillers too, take a walk around your local supermarket, it's usually full of ideas too, or a freezer shop? Freezer shops party food is usually cheap & done in the oven!! Use pasta , tuna & sweetcorn mixed with mayo, loadfs of ways to make filling snacks cheaply! Good luck x

I wouldn't freeze them because the bread will get soggy. I've made finger sandwiches (cucumber, tomato, watercress) the day ahead though- and layered them with plastic wrap and then a wrung-out damp paper towel on top in a tupperware container, and it stays well overnight. Tortilla wraps do best when refrigerated overnight, before you slice them. There are quite a few salads that keep fresh for a few days in the refrigerator too: pasta salad, bean salad, coleslaw, fruit ambrosia, etc. You could make (or buy) meatballs ahead and heat them in crockpots (with toothpicks).
