all engines gain heat when you first shut them off its called heat soak. when you start it the pump flows and immediately it cools off. as far as the smell goes i bet you have a very small leak somewhere. waterpump?, radiator. heater hose quick release nipple? i bet it is evaporating before it can hit the ground. get a flash light and a good mechanic and check it out very closely

gauge stays just below the? middle running down the highway but when i stop and turn off the engine i get this real strong smell of anit freeze. checked for leaks and nothng. radiator stays full, no anit freeze in oil and overfill reservoir is normal. noticed that when i turn off the engine the temp gauge pegs out and when i turn the ignition on the temp gauge returns to normal and starts to fall off as the eng cools. is this normal for an S10?
