Book on AUTHENTIC Chinese meal preparation, full meals....?

I would like to learn to cook authentic Chinese (not the USA-specific Chinese restaurant fare,) but whole meals. Most books don't tell you how to determine what dish goes with what sides and drinks, things like that. I have some good books on dishes and preparation, but not many details on how you would make a cohesive, authentic meal. Basically, Chinese food preparation "theory."

A book ideally should be broken up by region, or a such a book for a specific region would be acceptable.

I read it a while ago, so I’m not positive it meets all your requirements, but it’s a good read and strives for authenticity.
