bobber project - 1970's honda cb750?

I have been seeing these bikes for sale around me for $1000-$1500, after doing some web browsing, I've seen some very cool bobber conversions on this bike and I've been considering attempting a project of my own. My main question is how much, if any, cutting of the chassis/welding would be involved to give it a classic 50's-60's bobber look (I want to go for kind of a ratrod look). I am pretty mechanically inclined, but I've never even touched a welder or plasma cutter in my life. Will I be getting in way over my head?
thanks bluff mike: yes, by definition, but if you aren't starting with a classic harley, i imagine the frame won't have the classic lines you are looking for? (the cb750 bobbers I've looked at seem as though the frame may have been modified to get the seat lower than the tank and give it that classic "ascending curve" from the rear to the front)
