Bike riding to get in shape?

I am a college student who has experienced the awfulness of the Freshman 15 (well, 20 or 25, really). I have not done anything physical since I quit tennis about two years ago. This summer, I will have 3.5 months off and am planning to work very hard and stay dedicated to getting in shape through bike riding. I live in an area with a lot of varied roads, some steep, some straight, some hilly, etc., and would love to take advantage of that. I am a vegetarian and healthy eater but will be going on a calorie-restricting diet (~1200) once summer comes. I am doing this so I can lose some of this extra poundage and so I can get my legs and body back in shape. Does anyone have a suggestion as to a regime that I could follow in order to achieve weight loss/muscle building results? I am a beginner. Thanks!
