Best way to spend the summer (From a college application standpoint)?

I am currently a junior in high school, and will be starting the college application process this August. I will be applying to some of the most selective universities in the country, and want to find a valuable way to spend my summer that will also enhance my college applications. I know that GPA, test scores, essays, letters of rec, etc. are all important - I just want to have that extra something to draw the attention of the admissions office.

I intend to double major Anthropology/History.

1.) Attending a summer program alongside undergrads at a prestigious university, earning college credit, and getting good grades. The classes would most likely be related to my intended major.

2.) Attending a summer program geared towards high school students at one of my top-choice universities. It counts for college credit, but is not an undergrad course. It is very specific to my major and areas of interest, focusing intensively on Ancient Egypt.

3.) Participating in an extensive student-run cultural exchange program to a foreign country. This includes a study of the nation's history and culture in comparison to our own, as well as humanitarian work. The group is also producing a documentary about the country.

4.) Volunteer/internship at a nearby college's Anthropology Museum. I have contacted the head of the Anthropology department about opportunities, but have yet to hear back.
