best thermostat to run in a 80's 350 chevy?

I have a 80's 350 chevy. Nothing special just bored and has aluminum intake.... I have 2 electric fans pulling 2300 cfm each and a nice sized rad. It also has a 160 thermostat. It runs good just crusing but as soon as I get in traffic or something it goes Way up. Around 210 and even further. I also have a shroud on these fans. I called permacool and they told me that I need to put a bigger thermostat in this. Around a 185. And it would make a considerable difference. He said that it would slow down the flow and alow the fans to do there work when it passes through the radiator. Is this true????
Has a newer rad. and the block was completely gone through but do you think that a 185 thermostat would keep it cooler???
