Bernie's Cove Betta tank and chemical filter media?

Hi everyone. So yes, I am guilty of buying on impulse. I bought a Betta and Bernie's Cove tank. For those who don't know it is a 1 gallon tank with an "under gravel filter".

Since a tank upgrade is not possible at the moment, I change 100% of the water every week to avoid the ammonia build up. The problem is that I'm leaving for about 2 to 3 weeks and my friends know less about taking care of Bettas than me... =\. So I'm thinking that maybe I could place a chemical filter media like Aquarium Pharmaceuticals Ammo-Carb Activated Carbon & Ammonia-Removing Resin in a media bag inside the hollow space under the gravel. That way one of my friends can feed my fishy every other day with out changing the water. Opinions? Options?... I think that 3 weeks is pushing it, suggestions?

Another question. I understand that the carbon will suck the Aquarisol (cooper based treatment that I use in small amounts as disease prevention) out of the water, what about the aquarium salt? Will it suck it out too?
