BA or BS in anthro/international relations/psyc/socialogy/history/communication!?

I am really sorry that it is so long, please give it a chance, I really would like to know what you think.
I have been thinking about this for a few years now and I just can't come up with an answer that i can be satisfied with so please help!
I am a junior in college and i am incredibly confused.
I have taken courses in almost every major there is and seem to like a little bit in everything. somehow, I have finally narrowed (if you can call it that) it down to these options: to get a double major in any combination of the fields i have listed in the title. my major question is if I get my BA in lets say IR and Anthro, will i be able to get a masters in pretty much everything? is it better to have a certain combination like IR and communications or Psyc and history than others? I am also planning on taking summer classes to fulfill science prereqs incase i want to enter a more specialized field like physician assistant. I have heard many people say it does not matter what you get your BA in, you can change your masters to be anything? is this true? can comeone with a math degree all of a sudden decide to get a masters in psyc? I have been worrying so much lately that i cant focus on anything else.
