Augmented and Diminished intervals: how do you know if its a double sharp/flat?

I thought you only use a double sharp or double flat to show that its already a sharp of flat thats being raised a half step. But apparantly theres another reason to put double sharps and double flats. Cuz if you start on C major the higher note is sometimes a double sharp or flat. I really dont understand why.
Please answer really clearly... im only in grade 9!
I don't understand what you mean. How do you know when you have an interval to make it a sharp or double sharp? or flat or double flat?
