Army, enlisting vs. OCS?

I'm currently going back to school with aspirations of joining the US Army. Started a career in corrections and 4 years in I hate it. I'm weighing options on whether to finish school in the next year and a half/two (I have like 60 units completed) or just enlist now and try to do it later. I'm 25 years old so the thought of enlisting and having a 19 year old try to tell me what to do is a little disconcerting as I doubt I would respect him. OCS is what really intrigues me, but there are some things that are scaring me off. For example, as of right now I want a 35 series MOS in Intelligence. From the limited research I have done, assuming there are open slots and I score a certain # on the ASVAB, if I enlist I get the MOS I want. Now is it true that as an officer you are simply thrown into whatever area the Army sees fit? If that is the case I may just consider enlisting because the last thing I would ever want to do is get thrown into food services or a tank division where I know nothing of armor, mechanics, etc. Anyone who knows how the Army works please provide me information.
