Are scientist too arrogant? Shouldn't they say "as far as we know...." more than we do?

they seem to talk in absolutes when it comes to big questions as to the age of the universe, the size and shape of the galaxy, not being able to travel faster than light, etc.
but considering we've never even sent a man further than the moon or a probe to another solar system, do we really know for sure all of that stuff? Are we so sure that stuff will never be disproved?
No, I do NOT know for sure when the sun will just explode. No one does because no one's tracked a bunch of similar stars for their entire life times. I just assume it will be there tomorrow!
