I'd say that you probably need to stop by your local REI and let them set you up with gear for what you need.

In addition to the usual stuff, (water, etc,) I always take my Leatherman multi-tool, my big Mag-lite and Mini-Mag-Light, as well as a cell phone. Having not been the best scout in the world, I also take some other sort of "cheats" with me. I've found that a Bernz-O-Matic soldering torch is indispensible for starting a fire at times, usually Coghlan's waterproof, windproof matches.
Being the idiot I am, I'd probably increase the load with a flask or two of something.
As far as food, I'm partial to canned goods and MRE's, (the local Army-Navy store,) which can easily be prepared by the fire. Take the labels off, poke a hole in the top, and you can safely heat a can of stew or Ranch Style Beans by the fire, just remember to wear gloves when you grab the cans.
As for fun, given the company, I'd say you pretty much don't have to worry about it. You'll have enough fun sharing the experience together.
The only other suggestions I have are that most sleeping bags can be joined together to promote warmth. Beyond that, bring anything you think you'd need if you think you'll be sharing a double sleeping bag with your hiking partner.
If you'd told me five years ago, that I'd have the time of my life, hiking around the desert and looking at cacti with a significant other, I'd have said you were insane. I'll never look at hiking and camping the same way. Enjoy.
