Animals have destroyed my veggie garden!!?

The easiest way to prevent wild animals from eating your garden is to put an expensive fence around the exterior of the garden. However this is not an option for everyone. There are a variety of 'liquid fence' sprays that repel dear and rabbits (the two most likely culprits). However, one of the easiest, and most attractive ways to repel wild animals is by planting marigolds around the perimeter of your garden. The repulsive smell of these flowers acts as a natural fence.
 
I'm not sure if it's rabbits or squirrels, but I have planted vegetables like lettuce, jalepenos, and brussels sprouts, and they have nibbled on just about everything. I've done what I can to keep them out and it's working, but will my vegetables continue to grow even after they've nibbled down the leaves of the plants?
