Am I understanding the statute of limitations correctly?

I live in Ontario Canada. From what I have read, I understand that if 2 years has passed since I made a payment towards that debt, then I am no longer required to pay that debt?
Is it just a payment? or does acknowledging the debt also count to restart the SOL.
