I am trying to stop cooking with white flour. Out of oat flour, brown rice flour, and soy flour etc. which is most like white flour when it comes to the taste and texture when cooking. For example when frying white flour it kind of puffs up and becomes crispy. Which of these flours does this most like white flour?
I've tried brown rice flour but it didn't really expand, it just got kind of crispy with a grainy kind of texture.
Also when it comes to cooking oil which is best? I enjoy olive oil because it's supposedly healthy and has just as many uses as vegetable oil. What about grape seed oil, walnut oil, etc.
Overall I am trying to become a bit healthier but I don't want to give up on fried foods.
