Activities to do with mountain bikes?

I am in college to become a physical education teacher, and for one of my classes, I need to come up with activities to do with mountain bikes to teach to my classmates. Last class we covered "games" such as turtle race(slowest wins) and paper boy(throwing a paper into a box while riding the bike). For our next class, however, my professor said we need to do activities that deal more with actually riding, as we need to take our classmates riding around campus. We HAVE to teach something though, that is the point, so does anyone have any ideas?

Also, we already covered the basics, safety, and gears, so I can't do anything with that.
