...in the pores? I have been given homework on Protein Electrophoresis. We have not covered it at all in class, and I cannot find enough detail to be able to answer this question from the textbooks I have. The questions is:
"Using your knowledge of the structure of starch, explain why a starch gel forms a network of pores."
Also we need to be able to say what is in the pores.

please help asap!
