!995 Dodge Dakota Fuel Problem?

When I first got my truck a month ago it had just had a engine with 80,000 miles on it installed. I filled the tank up and when the gas level got low the truck started chugging, and acting like it was gonna run out of gas. The weird thing was when i filled up it had 3 gallons of gas left in it. Is there something wrong or is it supposed to do that? Also now when I push on the gas no matter how hard, it seems like it is having a hard time getting gas to the engine. I can hear it doing a little chugging but don't really feel it and it has very little acceleration. What could be the problem with that?
 
Three gallons is about right, but you should not let the tank run that low, it's hard on the electric fuel pump which is located inside the fuel tank. The fuel surrounding the pump actually keeps the pump cool and a cool pump will last longer. It's possible by letting the tank run that low that the pump has picked up sediment from the tank and has partially clogged the fuel filter which in turn will result in poor acceleration. Check the fuel pressure with a gauge at the fuel rail.

One other item that will cause poor acceleration is a clogged catalytic convertor. If you hear a rattling sound in your exhaust system occasionally, when the system is cool hit the bottom of the convertor with the side of your fist, if you hear a rattling sound the honeycomb has broken loose and will sometimes turn enough to plug the exhaust end of the convertor, had it happen to me.
 
You have water in the gas. You got it when you filled up. Go to the parts store and get a couple of bottles of gas dry. Run the truck down under half a tank of gas. Now when you pull up to the gas pump pour the gas dry in then pump your gas, that will mix it good. And by all means don't buy any more gas at the same place.
