95 LHS Chrysler stalled out, why?

The other day the car didn't start all day, put some dry gas in and tried again. The battery was fine and the car would just stop when I wasn't giving it gas. Tried driving and two times it stopped when I was going slow. After the second time I went faster and after pulling into a parking spot assuming the car was going to turn off, it stayed on.

I drove to the mechanic and he said after driving it, it seems fine but will give it a look later this week. What could have caused this? The car's been running fine since. The only thing I noticed was it's been running a little bit under the 1 rpms and normally it runs above the 1 when the car is sitting there in park/drive...
Strange, I put in a new fuel pump 2 months ago, is there anyway to check if this is it without having to open everything back up?
 
It sounds like a fuel pump problem. If you put gas in it and it works fine then it is very possible. It might be over-heating if it has too little gas to keep it covered, my father's truck is the same way.
