2002 Ford Focus Overheating?

I have a 2002 Ford Focus and when I drive it will overheat on highway speeds after about 150 km. Tomorrow I am going to flush the coolant reservoir and replace the coolant because I am a little skeptical of the current mixture.

Now today when I was driving the coolant was literally boiling (or bubbling at least) inside the reservoir and I suspect this being due in part to my having put an improper proportion of coolant to water. (Too much water).

Now my question is, I am going to be driving through some mountainous terrain within the next couple days and I am too poor to take it to the dealership so is there anything that anyone can help me with? I am extremely new with cars and other than a fair amount of reading I am completely clueless when it comes to car engines.

I can add more information pertaining to the symptoms or anything really! Any tips would be appreciated although I suspect a faulty coolant fan to be at the core of my problems.

And also, when the engine overheats the temperature reads as normal (right in the middle.) It never goes into the red... would this lead one to believe there is a thermostat problem?
