2001 Ford Escape (V-6, 24 V-DOHC) overheating?

My Escape has recently began to run slightly hotter than normal, and now the radiator hot light comes on. Here is what I have tried so far:
1) Changed thermostat, water pump and ECT sensor.
2) Changed coolant-also ran coolant through radiator to ensure its not totally clogged or something (its not)
3) Heated up ECT sensor (removed) with a heat gun to see if it would kick on the fans (they do come on with heat gun but not while installed --fans do not come on even with engine hot.
I am not a car mechanic but that perplexes me. Is it possible that the sensor is not getting as hot as it should even though the engine is hot? ...a coolant circulation problem perhaps... Air in the system? I really don't know. Any help would be highly appreciated, thanks.
