2000 Cherokee Sport 4.0L overheating, turned her off and 5 min later she was back to...

...normal.? I just got it about 2 weeks ago and it overheated so I took it in and they said the radiator had a leak. Got it replaced along with a new thermostat and coolant flush. It was running normally (around 210-220F) until today it overheated (255). I pulled over, didn't see anything that screamed out wrong and got back in to drive nearby to a gas station to get some coolant. Started her back up and she went down to 210 again! I decided that maybe the coolant was just low as the reservoir was almost completely empty but that didn't make any sense because I just got all that "fixed" 2 days ago. So I drove it back home instead and right as I pulled in to my driveway she overheated again (255)! I'm really not sure whats up, I don't think it's the pump because I specifically asked them to check that when I took it in and I don't think it's the head gasket because I did the bubble check before I took it in. Any ideas as to what the problem could be? Thanks!

btw I still haven't put more coolant in, but i'm not convinced that will solve my problem
