2 questions in 1 ,1984 honda v65 sabre?

how do you know when the clutch needs replacement,recently ive been hearing a clunk when i take off in first gear soon as i let off the clutch handle other than that it runs fine also how easy is it to replace the clutch i have all the tools i think and have some good mechanical ability but ive never changed a clutch on a motorcycle
i want to change just the friction plates or do i need to change the steels plates also
