1998 Dodge Ram 2500 question?

My 1998 dodge ram 2500 has a carboned valve problem It is a V10 and sometimes I will be driving down the road and it feels severly underpowered, like it is running on less cylinders. Last summer we removed the catalytic converters because they were plugged up which caused a head gasket to blow, so we also replaced that. We also replaced the spark plugs. Please help me know what exactly is wrong with my truck and how to/how much it would cost to repair it. I will answer any questions that might help you answer me. Thanks.
i'm off to a bad start? i am slightly confused but i am frustrated about my truck. advice about what you might need to answer would be helpful.
 
have you ran a compression check on it or a fuel pump pressure test on it to see what its actually holding,id do that before i did anything else in it,low compression will cause a lack of power but so will a lack of fuel pressure,if you,ll do those two things you can narrow it down real good or at least rule that part of it out,good luck.
