1997 Cadillac Northstar Engine Problems?

I currently have possession of a 1997 Cadillac STS. Lately, the engine has been overheating and I cannot seem to diagnose the problem. My father has taken it into the shop and the mechanic refused to work on the engine because it's a Northstar engine. Although, he had replaced the thermostat the problems still persist. I honestly don't know enough about cars at all to diagnose what could be wrong. I've also read on several web pages that I would probably have to disassemble the whole top half of the engine-which could cost up to $3000. Could anyone inform me of what another problem with the engine might be? And what would solve the problem? Please and thank you.
It takes about 5 minutes for it to start overheating and it will not drop back down until I turn the car off completely and sit there for about 10-15 minutes. Then once I turn it on again, it wil start right back up.
As it starts to heat up, we would put more water in it along with the coolant. It would last for only a little while and maybe make about 5 miles before it starts overheating again.
