My mom wants to make chocolates filled with wine. The trouble is when the type of chocolate she uses gets wet it breaks down. She wants to condense the wine in some way that preserves the alcohol content. Boiling it would condense it, but all the alcohol would evaporate out. Suggestions?

It should be. I haven't tried it but it has no reason to not work really.
