    What's a good vegan substitute for queso fresco?

    It's a Mexican cheese. I guess it'd be compared to ricotta, if you're unfamiliar with it.

    How do you cook chestnuts?

    We're in the middle of trying different cooking methods. So far we seem to like chopping them in half and then cooking them in the pressure cooker. But I was wondering how other people prepare them.
