For the games that I have installed, 3D Snake and Stris, that is the only way to do it as far as I know. For Java games...it you might be able to adjust it via the volume buttons but I don't have any java games installed so I couldn't tell you if that would work or not.

I would go for the N73 (not N73ME) since I like bar form factor and it's the cheapest of those 4. You could always flash the N73 to the latest N73ME or N73IE firmware. I just bought an used N73 on eBay and am in the process of selling my T-Mobile MDA (G3 with SIM/CID unlocked).
