    I don't really see the need for menu cards when a buffet is being served. There is no need for a sign in front of the buffet either as the people will walk along and see for themselves what is there. Neither one is appropriate, especially the sign.     Yes, you peel them and cut in small chunks and boil them until tender, then mash them up. They take longer than regular potatoes to get tender, though. My grandmother would bake hers and then scoop them out of the skins when done, so either way is okay, I just prefer boiling. I make sweet...
