A white background is easy, creating a little light box for example with sides cut out covered with white tissue to produce soft light. How do you do the equivalent but for a sheer black background?

What are some good subjects for photographing with such a wide open aperture? I've tried fun things like the tips of pens or parts of a feather. Photographing a face kind of looks strange because essentially only their eyes are in focus and their ears go out of focus, when is that effect used?

For example are lenses that are f2.0 or f2.8 better than say kit lenses of f3.5? Even if you use the lens at a higher f-stop like at 11 or even 16?
