Go to a large party store and get a chafing dish kit. They are aluminum foil that have a stand and you put a special chafing dish candle under it. Party city has them.
There is no rule that says vegetables MUST be crispy but some are better if they are cooked "tender crisp" (Broccoli, green beans etc). Some vegetables are fine on the mushy side (potatoes, carrots)
