    why wont celery go soft when i cook it?

    i cook allot for my family and it seems whenever i cook celery, it stays hard and crunchy even if cook it for thirty minutes on high heat. is it the way i am cooking it (i cant use salt), or is the celery bad? if its how i cook it, how do i fix this problem?
