What are the best games for PS3 that I can play online and have multiplayer/co-op mode. BONUS for an online multiplayer mode ;)

I have a 2nd gen Touch and want to update to IOS4 (mostly for the playlists on the go) but I don't have my music and movies synced with my iTunes. Is there anyway to update without wiping my Touch clean. Or, alternatively, is there a way to backup everything I have on my iTouch so I can sync it...
