i agree, this is a great assignment. I would want to do it First thing i thought of was the mona lisa before i even read it but its too obvious. Pick a famous movie scene, that everyone would do. Maybe do something related to history.

i would allow it if i was a teacher as a photography student(personally) i dont like shooting myself b/c i am not photogenic

if you are taking it somewhere to get developed, then i dont think theres a way but if you are doing it yourself, then you can cut it out after the developing process

I dont know any in chicago since i dont live there but check on craigslist. You could try amateur photographers if you dont want to pay much; like a college student. On the other hand, if you are willing to pay more, just google it or like i said check craigslist. good luck
