When I'm going about 65-70 mph and I tromp hard on the gas pedal the check engine light flashes on and off, but when I let off a little it will go off. None of the gauges showed anything unusual at the time. Is there something wrong with my truck, or is it just not meant to have the pedal down...

It depends what style you like.
If you prefer the modern street racers, get a Honda Civic.
If you prefer the older muscle cars, find an old Trans Am or something that needs a little TLC.
