Pound cakes seem to hold up well to trimming and cutting. They do not crumb as much as regular cake recipes do.
Add a cup of sour cream to any cake recipe you choose though and it will be more flexible and moist, less likely to crumble and tear.

For 3 year olds I would stick with peanut butter and jelly, maybe pimento cheese and more kid friendly things. Tuna, corned beef is not that kid friendly. Fine for adults but you ave to think on a 3 year olds level.
